Sweet Potato Salad
3 large sweet potatoes, cubed
1 large russet potatoes, diced
1 medium vidalia onion, diced
1 large carrot, shredded
2 large eggs, hard-boiled, diced
1 cup mayonnaise
Cut up potatoes as directed and simmer in lightly salted water till slightly tender(should still be "tough"). Drain quickly and immediately return to pot and cover with lid.
