Yankee Bacon Bake

Yankee Bacon Bake

1/2 lb. sliced bacon
1/2 c. cornmeal
2 c. milk
1/2 c. sifted all purpose flour
1 T. sugar
1 t. baking powder
1/2 t. salt
3 well beaten egg yolks
3 stiffly beaten egg whites

Quarter bacon slices; cook till crisp; drain. Mix cornmeal with 1 c. of the milk; cook till thickened; remove from heat. Sift together dry ingredients; blend into cornmeal. Mix in remaining milk and egg yolks; fold in egg whites and bacon. Bake in greased 2 qt. casserole at 325° about 1 hour. Serves 6.
