3 cups cooked beets
1/2 cup sugar
1½ tablespoons cornstarch
1/2 cup water
1/2 cup cider vinegar
2 tablespoons butter

In a saucepan combine sugar, cornstarch, water and vinegar. Bring to a boil and boil 5 minutes. Stir beets into mixture, cooking slowly and stirring occasionally until heated through. Add butter and continue cooking until butter has melted. Makes 6 - 8 servings.
