Fried Potatoes

Fried Potatoes
1-1/2 lbs large old potatoes
2 cups self-raising flour
1 tsp salt
1/4 tsp pepper
1-3/4 cup water
oil for deep frying
extra flour
Peel and wash the potatoes, cut into thin slices, about 1/8 inch thick, dry well. Sift flour salt and pepper into a bowl, make a well in the center, gradually add the water, mix to a fairly thick coating batter. Beat this until smooth and free of lumps.
Coat the slices of potatoes lightly with extra flour, shake off excess flour. Dip each slice into the prepared batter making sure that each slice is well covered. Drain any excess batter off the slices before frying.
Heat oil in large pan or deep fryer ( you need the oil hot enough as you would for French fries, test it with a small piece of potato); Deep fry potato slices a few at a time until lightly golden. Remove from oil and drain on paper towel. Increase heat of oil slightly refry the
