Grilled Potato Wedges

Grilled Potato Wedges

~ 2 lbs Potatoes
~ 2 Tbsp. olive oil
~ 1 Tbsp. fajita seasoning
~ 1 clove , peeled minced garlic
~ 1/3 cup spicy ranch dressing (like Hidden Valley)
~ 1 Tbsp. chopped fresh cilantro
~ 1 tsp. fresh lime juice

Heat grill. Pierce potatoes with fork. In microwave, cook 3 minutes or until starting to soften. Remove; let sit 2 minutes. Cut potatoes into 3/4" thick wedges. In bowl, combine olive oil, fajita seasoning, minced garlic and salt, if desired. Add potatoes wedges and toss to coat. Grill 8 minutes, or until tender or golden brown, turning once. In bowl, combine dressing, chopped cilantro and lime juice. Serve dipping sauce with potato wedges.
