Creamy Cheesy Potatoes

3 tablespoons butter
3 tablespoons flour
2-1/4 cups milk
1-1/2 cups American or mild cheddar cheese cut into small pieces
salt and pepper
14 small or 7 large potatoes, cubed

Melt butter, blend in flour and remove from heat.Add milk, cook on low till it thickens.Add cheese, salt and pepper.. Cut up peeled potatoes in small pieces and place in greased 9 x 10 inch baking dish. add sauce, mix well and add topping

Topping
Topping 3/4 stick butter
1-1/4 cups Ritz crackers , crumbles
paprika

Melt butter slowly, add Ritz cracker crumbs, spread on top of potato mixture and sprinkle with paprika. Bake at 375 degrees for 25 minutes, uncovered. When done the sauce should break through the cracker crumb crust.

made these for dinner tonight and they were nothing special. Maybe I used to many potatoes (hard to say what a large potato is) and they took way longer to cook than in the recipe. I would recommend to anyone that makes this to boil the potatoes slightly before hand or bake for a short time before adding the topping. We ended up having our potatoes for desert because when I took them out of the oven at the indicated time they were still hard.


I may give them one more try with some modification. Maybe some onion or garlic powder.
