Ulitmate Creamed Corn

Ultimate Cream Corn

1 (16 oz) bag frozen yellow corn
1-1/3 cups fat-free evaporated milk
1 Tbsp, rounded, flour
1/2 tsp salt
2 tsp sugar
1/4 tsp white pepper
2 Tbsp light butter
2 Tbsp Parmesan cheese

Thaw corn under running water. Drain thoroughly. Whisk the flour into 1/3 cup of the evaporated milk. In a large sauce pan, combine all ingredients except the Parmesan. Cook over low medium heat until it is just ready to boil, 8-10 minutes, stirring often. Reduce heat to low and cook until the sauce thickens and the corn is cooked, about 13-15 minutes, stirring almost constantly. Remove from the heat and stir in the Parmesan cheese.
