Cut up enough potatoes for your family. You can either peel them or not. I use a 13 x9x2
pan. Dice an onion or not. Pour salsa over the potatoes. I use Tositos brand mild flavor, but you can use whatever you like. Add about a tablespoon of ground cumin and about 1/2 tsp of chili powder or however much you like if you want it hotter. I like to add some salt with mine. Also you can add garlic powder. Put foil on top and bake at 350 for about 45 minutes or till potatoes are done. You can also adjust how much salsa you use, whether you want them drier or soupier. This is really cheap and really good.
I also make a Tex-Mex meatloaf and cook together with the potatoes. Or I boild chicken tenders and cook with the potatoes. Yummy! Any way you do it.
