Artichoke Rice Bake

Artichoke Rice Bake

2 t. margarine
8 oz. fresh mushrooms, sliced
1 small onion, chopped
1 1/2 t. garlic salt
1/2 t. seasoned pepper
2 cups chicken broth
1 cup long grain rice
2 medium tomatoes, chopped
2 cans artichoke hearts (7 oz each) drained and quartered
Chopped parsley for garnish

In large skillet, melt margarine and saute mushrooms, onion, garlic salt and seasoned pepper until tender. Add broth and rice. Bring to a boil. reduce heat, cover and simmer 25 minutes or until liquid is absorbed. Stir in tomatoes and artichoke hearts. Let stand 2 minutes. Garnish with chopped parsley. Variation: For a Cajun style main dish, stir in 1 cup of cooked shrimp, chicken or pork and 1/2 t. hot pepper sauce.
