Freezer Corn


1/2 lb. butter
11-12 cups corn (about 20 ears)
1 cup half and half
1/2 tsp. salt


Cut the corn off of the ears. Mix everything and bake at 300 ° for 1 hour. Stir every 15 minutes or so. Let it cool. Place in freezer bags or containers and freeze.


This makes a great and easy side dish that you will then have available when you need something tasty in a hurry!

Wow - the cheapest we have had this year is 4 ears for a dollar, and it is usually 2 for a dollar! Used to be we could get it 6 or 8 for a dollar pretty regularly, and once or twice a season, 10 for a dollar. It has been much more expensive this year.

Wal-Mart had 20 ear for $2.00 this weekend.

I did add more salt- 1/2 teaspoon for 20 ears seemed like not enough- I doubled it..


Cooked it up and John and I both had a bowl- we both added more salt..


Corn was $4.00 for a dozen but it was VERY GOOD- I don't mind paying that when its good- I have sadly tasted one or more ears of 'cow corn.. '
