Does anyone have a recipe for leftover lemon pepper pork loin? Any thoughts would be appreciated.

I'd shred it up and add BBQ sauce and fix BBQ pork sandwiches.

How about this one?

Leftover Pork and Potato Casserole

  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 3 tablespoons butter or margarine
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon Worcestershire sauce
  • a few dashes Tabasco sauce or ground red pepper, or to taste
  • 2 cups diced pre-cooked pork
  • 2 cups diced cooked potato
  • 3/4 cup frozen peas or frozen peas and carrots, cooked (or use leftover peas)
  • 1 teaspoon paprika

  • In a large skillet, sauté onion and celery in butter until onion is soft and golden. Blend in soup, milk, Worcestershire, and Tabasco sauce or ground red pepper. Add remaining ingredients; cook over low heat for about 10 minutes, or until heated through.

    Buy a bag of stir-fry veggies (or use whatever Summer bounty you have - onions, peppers, squashes, sno peas, broccoli).
