Creamed Spinach Casserole


1 pkg frozen spinach, thawed
1/3 c. onion, chopped
1 can Cream of Mushroom soup
1/2 c. sour cream
1/2 c. mayonnaise
3 eggs
1 c. Parmesan cheese, shredded
1 c. Mozarella cheese, shredded


Microwave spinach and onion for about 2 minutes and drain in colander to get as much liquid out as possible.


In large bowl; add soup, sour cream, mayonnaise, eggs and most of the cheese, reserving a little for the topping. Mix together with spinach and onion.

Spray an 8 X 8 inch (20.5 x 20.5 cm) casserole dish with cooking spray and add mixture. Sprinkle remainder of cheese over top. Bake in preheated 375 F (190 C) oven for 35 minutes or until lightly brown.
