Swiss Chard

SWISS CHARD

2 pounds swiss chard
2 tbs olive oil
2 cloves chopped garlic
Salt and Pepper, to taste

Fold each leaf of swiss chard in half lengthwise along stem, vein side out. Holding folded leaf in one hand, tear stem away, along with tough center vein. Coarsely chop remaining leaves.

Heat oil in skillet, add garlic and cook 15 seconds. Next add damp chard leaves, a handful at a time, stirring after each addition. Cover pan and cook 5 min. Remove lid and continue cooking until all liquid has evaporated. Season with salt and pepper to taste.

This pretty much the same way I make it only I do add about a cup of chicken broth before putting on the cover.
