Mushroom Salad

Mushroom Salad

1/2 pound mushrooms
1/2 cup oil
1/4 cup wine vinegar
1/4 cup parsley, chopped
1 t. salt
1 t. sugar
1/2 t. garlic powder
1/4 t. pepper
2 cups tomatoes, sliced
1 cup onion, thinly sliced

Rinse the mushrooms and pat dry. Slice. Place them in a bowl. Combine oil, vinegar, parsley, salt, sugar, garlic powder and pepper. Mix well. Pour over mushrooms and toss well to coat. Add tomatoes and onion and toss lightly. Cover and refrigerate 1 hour before serving. A delightful addition to a steak and baked potato dinner.
