Tomato Feta Salad

6 oz jar marinated artichoke hearts, quartered
1 clove garlic, chopped
1 tbs chopped parsley
1 head romaine lettuce, separated into leaves
2 tomatoes, cored and sliced
1 small cucumber, sliced
3/4 cup cubed feta cheese
1/4 cup pitted kalamata olives
1/4 cup thinly sliced red onions
1/2 tsp dried oregano

Drain artichokes and reserve marinade. Stir garlic and parsley into artichoke marinade. Set aside. Arrange lettuce leaves on plate.

Alternately arrange tomato and cucumber slices, top with artichokes and feta cheese. Top with olives, onions and oregano. Drizzle with dressing. MAKES 6 SERVINGS
