Sauerkraut Salad

Sauerkraut Salad

16 oz sauerkraut - preferably from a bag or jar
15 oz canned hominy - rinsed and drained (or substitute corn)
15 oz canned black beans - rinsed and drained
1/3 cup rice vinegar (any good clear vinegar)
1/4 cup water
4 tablespoons sugar (Splenda works fine)
1 tablespoon olive oil
1 teaspoon mustard seed (optional)
salt and pepper to taste
1/2 a red onion, diced small
1/2 an English cucumber, diced small
2 ribs celery, diced small
2 carrots, diced small
1 green pepper, diced small
1/2 cup chopped parsley (or cilantro or dill or another herb)
optional: chopped tomato

Rinse, squeeze, drain and chop sauerkraut. Rinse and drain hominy and beans.
