Corn Fritters w/Tomato Corn Salsa

2 medium ears of corn
1 medium tomato, cored seeded and finely diced
1 scallion, thinly sliced
1 tbs chopped parsley
1 clove garlic, minced
1 1/2 tbs each lime juice and vegetable oil
1/2 tsp salt
1/4 tsp black pepper

3 medium ears of corn
1/4 cup each cornmeal, flour and buttermilk
1 egg, lightly beaten
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp cayenne pepper
1/4 cup vegetable oil for frying

SALSA: Cut kernels off corn. Toss with next 7 ingredients. Set aside.

FRITTERS: Cut kernels off 2 ears of corn. Grate kernels off remaining ear of corn. Scrape any remaining pulp into bowl. Add cornmeal and next 7 ingredients to bowl, stir until combined.

Heat oil in skillet. Drop batter by 1/4 cupfuls into skillet and press with spatula to flatten. Fry 2 min. per side or until golden brown. Remove to paper towel lined plate and serve warm with salsa. MAKES 8 FRITTERS.
