Irish Mashed Potatoes

8 medium potatoes
1 onion, thinly sliced
1 1/2 cup buttermilk or milk
4 green onions, finely chopped
6 T. margarine, room temperature

Boil potatoes in salted water until soft. Drain. Cook onion in milk or buttermilk for 5 minutes; pour milk and onion mixture onto potatoes and mash them until creamy. Beat in chopped green onion and butter or margarine, salt and pepper. Serve hot.
