Asian Rice


1 1/2 c. water
3/4 c. uncooked brown rice
1/2 c. red onion; chopped
1/2 c. green pepper; chopped
2 T. cider vinegar
2 T. honey
2 T. soy sauce


In a small saucepan; bring water to boil. Stir in rice, return to boil. Reduce heat; simmer, covered for 25 minutes or until rice is tender and liquid is absorbed. Rinse rice under cold running water until cool; drain well.
