Sweet Potato Casserole


2 lb. sweet potatoes, scrubbed
1 c. sugar
8 T. butter
1/3 c. milk
2 large eggs, beaten
1 t. vanilla extract
1/2 t. cinnamon
3/4 c. pecans; chopped
3/4 c. light brown sugar; packed
1/4 c. all-purpose flour
3 T. butter; melted

In a large saucepan; add sweet potatoes adding enough water to cover. Bring water to boil over medium-high heat, reduce heat and simmer for 20 to 25 minutes or until potatoes are tender. Drain and mash with potato masher.


In a large mixing bowl; place mashed potatoes, sugar, butter (8 tablespoons / 100 ml), milk, eggs, vanilla and cinnamon.. Beat with electric mixer on medium-low speed for 2 minutes or until combined. Spoon mixture into lightly greased 13 x 9 inch (33 x 23 cm) baking dish.

In a small bowl; place pecans, brown sugar, flour and melted butter. Stir with fork to combine. Scatter pecan mixture evenly over top of sweet potatoes. Bake in preheated 350 F (180 C) oven for 25 to 30 minutes or until topping begins to brown.

My family & I tried this dish at a restaurant and enjoyed it, Tracy. I might make it one of these days. Have to get the pecans and potatoes.
