Pickle Barrel Potato Salad

Pickle Barrel Potato Salad

3 lbs. small whole new potatoes, unpeeled and scrubbed
1 cup mayonnaise
1/4 cup sour cream
3 T. Dijon mustard
1/4 to 1/2 t. pepper
6 hard cooked eggs, chopped
2/3 cup chopped dill pickles (3 to 4 large)
1 small white onion, chopped fine
Additional hard cooked egg for garnish

Put potatoes in large pot. Add salted water to cover; bring to boil and simmer just until tender, about 25 minutes. Drain and chill; cube potatoes; mix mayonnaise, sour cream, mustard, 1/4 t. salt and the pepper in large bowl. Add potatoes and remaining ingredients and toss to mix. Garnish with hard cooked egg, cut into wedges and sprinkle on a few grindings of pepper.
