German Potato Cakes

German Potato Cakes
4 potatoes, peeled and coarsely grated
1/4 c. milk
1 egg, beaten
1 onion, diced
2 T. all-purpose flour
salt and pepper to taste
oil for frying
Combine all ingredients except oil; mix well with a fork and set aside. Heat 1/4 inch oil in a deep skillet over medium-high heat. For each pancake, spread about 2 heaping tablespoonfuls into a circle in skillet. Cook for 3 to 4 minutes, until golden; turn and cook on other side. Drain on paper towels. Serves 4 to 6.
