Potato Salad Guadalajara

1 pkg. (5.5 oz) dehydrated au gratin potatoes with sauce mix
3 2/3 cups water, divided
3 T. cider vinegar
1 t. chili powder
1/2 t. ground cumin
1 medium tomato, coarsely chopped
1 avocado, seeded and coarsely chopped

In medium pan, mix potatoes and 3 cups water.Heat to boiling. Reduce heat. Cover and simmer 15 minutes until tender. Drain. Cool. Meanwhile, in small pan, mix sauce mix, remaining 2/3 cup water, vinegar, chili powder and cumin. Cook, stirring constantly until mixture boils and thickens. Cool to room temperature. In large bowl, mix potatoes, tomato, avocado and sauce mixture. Toss lightly. Cover and chill. Serves 4
