Rosemary Potatoes

Rosemary Potatoes

4 to 6 Redskin potatoes, peeled and quartered
1/4 cup olive oil
2 tablespoons lemon juice
two cloves garlic, minced
1 or 2 teaspoons dried rosemary, crushed
salt and pepper to taste

Toss together all ingredients in a large bowl; spoon into a greased 13 x 9" baking pan. Bake at 350° for one hour. Serves 4 to 6.
