8 medium potatoes, 2 lbs.
1/4 cup margarine, divided
1 small head green cabbage, chopped
2 scallions, sliced
1/2 to 1 cup warm milk
4 T. chopped parsley, divided
1 slice cooked and crumbled bacon

Prepare potatoes and cut into quarters. Put in large pan with 1 inch salted water; bring to a boil; reduce heat. cover. Simmer 25 to 30 minutes until potatoes are fork tender. Meanwhile, , in large skillet, melt 2 T. margarine over medium heat; add cabbage and scallions; cook stirring 3 to 4 minutes. Add 3 T. water; cover. Cook 8 to 10 minutes, stirring occasionally, until cabbage is soft; set aside. Drain potatoes; put in large mixer bowl. With mixer at low, beat with remaining 2 T. butter. Gradually beat in 1/2 cup milk until potatoes are smooth; add more milk if desired. Fold in cabbage and 3 T. parsley/ Spoon into serving bowl. Sprinkle with bacon and remaining parsley.
