Zucchini with Feta Casserole

Melt in saute pan:
1 Tbs oil & butter

Add and cook about 4 minutes:
3-4 medium (about 8 cups) zucchini (sliced into half moons)
1/2 red pepper, diced
1 Tbs each garlic & thyme

2 eggs
1/2 cup sour cream (lite is fine)
1 cup feta
3 Tbs Parmesan or Romano cheese
1 Tbs lemon juice

Butter or spray a casserole dish. Place 1/2 of the sauteed mixture into the casserole dish and top with half of the egg mix. Top w/rest of sauteed mix and finally remainder of the egg mixture. Bake 350 40-45 minutes or until golden on top.
