Sweet Potato Pie

2 T heavy cream

4 T margarine at room temp. (1/2 stick)

¾ C granulated sugar

¾ tsp nutmeg

¼ tsp allspice

3 C cooked, mashed sweet potatoes

¾ tsp. vanilla extract

½ tsp cinnamon

1 lg. egg

9-inch pie shell

Preheat oven to 400°.

In a medim bowl beat together sweet potatoes and margarine. Add sugar, cream, vanilla, nutmeg, cinnamon and allspice. Blend well.

Beat egg until frothy. Fold into potato mixture.

Pour filling into prepared 9-inch pie shell. Bake for 50-60mins.

** Bumping this up....thought I had posted it before! (and on my birthday, too!!) Also, here's the recipe I use to make the crust (compliments of Emeril -- the best crust recipe I've found so far!!) ~Carrie


Basic Sweet Piecrust

1 ½ C plus 2 Tblsp all-purpose flour

1 Tblsp sugar

½ tsp salt

8 Tblsp (1 stick) unsalted butter, cut into ¼-inch pieces and chilled

2 Tblsp vegetable shortening, chilled

3 Tblsp ice water, or as needed

1. Sift the flour, sugar and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to overmix.

2. Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30mins, and up to two days.
