Cucumber Dip or Spread

2 medium cucumbers
2 (8 oz) pkgs cream cheese, softened
Several drops hot sauce
1 (1 oz) pkg dry ranch dressing mix
1/2 tsp garlic powder

Peel the cucumbers, cut in half lengthwise and scoop out the seeds. Chop cucumbers in very fine pieces, or in food processor. In a mixing bowl, combine the cream cheese, hot sauce, dressing mix and garlic powder and beat until creamy. Combine the cucumbers and cream cheese mixture and mix well. Serve with chips.

*May also add 1/2 cup chopped pecans.

**This dip makes great "party" sandwiches made with thin, sliced white bread. If you do use it for sandwiches, make sure you squeeze all the water out of the cucumbers.


Life is too short to eat fat-free cheese!
