Roast Beef Roll Ups

Roast Beef Roll Ups

1 pkg. cream cheese, softened (8 oz)
1 cup crumbled blue cheese (4 oz)
1 t. Dijon mustard
1/2 t. black pepper
1 pound sliced deli roast beef
1 small red onion, thinly sliced
12 butter lettuce leaves, about 1 head

Mix cream cheese, blue cheese, mustard, and pepper in a small bowl until well blended. Spread each slice of roast beef with 1 T. cheese mixture. Top with 1 to 2 slices onion and one leaf lettuce. Roll up beef slices starting at short end; secure with toothpick, if needed. Arrange rolls on serving platter.
Makes about 12 servings.
