Cheese and Chorizo Dip

8 oz. uncooked chorizo sausage
4 cups shredded sharp cheddar cheese (1 lb)
1/2 cup sour cream
1/2 cup half and half or light cream
1/4 t. crushed red pepper
Crush red pepper for garnish, optional

In heavy pan, cook chorizo over medium heat about 5 minutes or until browned. Drain off fat. Stir cheese, sour cream, half and half or cream, and crushed pepper into chorizo. Cook and stir over low heat until cheese is melted. If desired, sprinkle with additional crushed red pepper. Serve with chips. Makes 3 1/2 cups dip.


Life is too short to eat fat-free cheese!
