Classic Mojito

6 tablespoons fresh lime juice, or about 3 lime
2 tablespoons superfine sugar
4 sprigs fresh mint
Seltzer
3 ounces white rum

In a small pitcher, combine lime juice, superfine sugar, and 2 sprigs mint; stir until sugar has dissolved. Add rum, and stir to combine. Fill 2 tall cocktail glasses with crushed ice. Strain cocktail into the two glasses; top off with seltzer. Garnish each cocktail with another mint sprig and lime wedge.
