Fried chicken is probably my favorite food. I like it with rice, which

is what I am fixing tonight. I thought I'd share my fried chicken recipe

and see if anyone else has a good one. I am always looking to fry the

perfect chicken.

Fried Chicken:

butermilk

whole chicken

1 1/2 c. flour (add more f needed)

1 tsp. seasoned salt

1 tsp. white pepper

1/2 tsp. poultry seasoning

shortening (about 1 c.) melted

I cut up and skin the chicken. Then I soak it in buttermilk for at least

2 hours. Then mix the flour and seasonings. Dredge the chicken pieces

through the flour mixture. Slowly place the pieces in the melted shortening

(I cook it in an electric skillet). Use a medium heat setting. Cook for

about 25 minutes, until the juices run clear.

I can't wait to see if anyone else has a good fried chicken recipe.

Hi Tracy... Mmmm... you got me hankerin' for some fried chicken now and it's only 9:30 am! LOL Fried chicken is one of my favorites too. I do mine almost exactly like you but I add some paprika to my flour mixture to give it a wonderful color. Don't know if it enhances the flavor but it does look good! LOL

I also love the idea of putting a dry ranch dressing mix in the flour too.. I'm gonna hve to try that soon for a change!

Let me know how it works out for you. I also use it on chicken fried steak and pork chops (though not anymore because I now hate pork ~ I had a pork roast turn bad in my 'fridge and the smell has stayed with me ~ Ugh forever.) I think the secret is in how chicken is fried, though. Sort of like making bread ~ there is a touch to it.

And I think Southern folks have their finger on that button. :) K

LOL about the chicken skin. I LOVE the skin (my favorite thing about deli chicken) but just cannot bring myself to leave it on at home. I have never tried the double dredge. I'll give it a whirl next time.

the only thing I do differently is that I dredge the meat in seasoned flour, then I use an eggs, salt and pepper mixture; then back into the flour or I use breadcrumbs and seasoning, then to the fryer. (I also take the skin off, but secretly love the skin on).

Mmmm, you've got me thinking about Sunday supper.

Lurker here with a tip.

I make the chicken just like yours but sometimes I add a pkt of hidden valley ranch to the flour ingredients and it gives the chicken a little kick.
