Tortilla Fruit Rollups

The perfect ending to a Mexican dinner!

1 can strawberry fruit pie filling (21 oz)
8 to 10 flour tortillas
2 cups water
1 1/2 cups sugar
3/4 cup margarine
1 t. almond flavoring
Ice cream

Open and set aside the strawberry pie filling. Prepare flour tortillas by
softening in butter in small skillet, or heat in microwave, if not fresh enough to roll. Place fruit filling in middle of each tortilla and roll like
an enchilada. Place seam down in 13 x 9" baking dish. Mix water, sugar and margarine in pan. Bring to a boil and add almond flavoring. Pour mixture over filled tortillas. Place in refrigerator and let soak 1 to 24 hours. Baste with sugar mixture before and during baking. Bake in a preheated 350 oven for 20-25 minutes or until hot and slightly browned. Extra special touch: serve with ice cream.

I bet this is very good. I used to make a similar recipe called Mexican Apple Pie when I was in high school.
