Cabbage Soup

Cabbage Soup

1 medium head cabbage
1 large onion
1 large potato, pared
3 cups skim milk
2 T. margarine
Pepper to taste

Shred the cabbage. Thinly slice the onion and potato. Place vegetables in pan with small amount of water. Cover and cook slowly until tender. Mash to a pulp. Cabbage should retain some texture. Add milk, margarine, salt and pepper. Simmer 10 to 15 minutes. Serves hot. Serves 6
