Tasty Omelet

Tasty Omelet
1/2 cup finely chopped broccoli
1/4 cup chopped onion
1 clove mnced garlic
3/4 cup fresh spinach leaves
4 eggs
1/8 tsp pepper
1/2 cup shredded cheese
salt to taste
Mist non stick pan with butter spray, add broccoli, onion and garlic. Saute over med heat. Cook for 4-6 minutes. Add spinach and cook 1-2 minutes longer. Remove veggies and keep warm.
Whisk eggs and pepper together. Pour into heated pan sprayed again with butter spray. Cook, lifting edges with spatula as they set and tipping pan for uncooked egg to run underneath. When almost set, flip the omelet. Sprinkle veggies over eggs. Sprinkle cheese ontop. Fold omelet in half. Salt to taste.
