Cream of Mushroom Soup

Cream of Mushroom Soup
1/4 cup butter
3/4 cup green onions, chopped, including green tops
2 cups mushrooms, chopped
2 T. flour
1 cup half and half
1 cup chicken broth
1/4 t. salt
1/8 t. pepper
In large skillet, cook onion with butter over very low heat for 5 minutes or until tender. Add the chopped mushrooms and cook, stirring for 2 minutes. Add flour and cook, stirring for 3 minutes. Remove pan from heat and add chicken broth and the half and half in a steady stream, whisking. Bring the soup to a gentle boil over moderate heat and simmer for 5 minutes. Add salt and pepper. This is one of those great soups that is so easy to make and is better if made ahead and just reheated. Serves 4
