Bacon Egg Salad Croissants

Bacon Egg Salad Croissants
4 servings

6 hard cooked eggs, chopped
1/3 c. diced celery
1/3 c. mayonnaise
1 t. prepared mustard
1/4 t. salt
1/8 t. pepper
1/3 c. crumbled cooked bacon
4 lettuce leaves
4 thin tomato slices
4 croissants, split

In a bowl, cominbe the eggs, celery, mayonnaise, mustard, salt and pepper. Fold in bacon. Place lettuce leaf, tomato slice and 1/2 cup of the egg salad on each croissant. Serve.
