Easy Minestone Soup

Easy Minestrone Soup
Preparation time: 20 minutes


Cook time: 20 minutes


Serves 4


1 tbsp (15 mL) olive oil
1/2 medium yellow onion, peeled and finely diced
1 clove garlic, peeled and minced
1 stalk celery, trimmed and finely diced
2 cups (500 mL) sodium reduced vegetable or chicken broth
1 19-oz/540 mL can kidney beans, drained and rinsed
1 10-oz/300 g package frozen mixed vegetables
1 medium potato, peeled, washed, and diced
1/4 tsp (1 mL) dried basil
1/8 tsp (0.5 mL) ground black pepper
Heat oil in a medium Dutch oven over medium heat. Add onions, garlic,
and celery and sauté 3 to 4 minutes, until onion is wilted and golden.


Add broth, beans, vegetables, potatoes, basil, and pepper. Bring to a
boil, then reduce heat to low and simmer 15 minutes. Serve warm.
