BLT Salad

8 slices bacon, cut into 1/2 inch pieces
1 avocado, pitted and skinned
1/3 cup buttermilk
1/4 cup chopped red onion
2 tsp lime juice
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/2 cup cornmeal
1/3 cup all purpose flour
1 egg, lightly beaten
2 medium firm unripe tomatoes, cored and cut into 1/2 inch slices
2 tbs canola oil
3 romaine lettuce hearts, chopped

Cook bacon in a skillet 8 min. or until crisp. Remove bacon and drain on a paper towel lined plate, pour off drippings and reserve. Wipe out skillet. Place avocado, buttermilk, onion, lime juice, 1/4 tsp each salt, black pepper and cayenne in blender and puree until smooth, set aside.

Stir together cornmeal, remaining salt, black pepper and cayenne in a shallow dish, place flour and egg in separate shallow dishes. Dip tomato slices in flour, then egg, then cornmeal mixture to coat. Heat oil and 1 tbs of bacon drippings in skillet.

Fry tomatoes in single layer for 3 min. per side or until golden brown. Repeat with remaining tomatoes. Place lettuce in a large bowl and toss with bacon and 2/3 cup avocado dressing. Place 2 cups salad on each plate and top with 3 fried tomato slices. Dollop with a little of the remaining dressing and serve.
