Gourmet Quiche

6 eggs
1/2 cup light cream
1/4 t. Tabasco sauce
Pepper to taste
1/2 onion, chopped
1/2 small can diced green chilies
1/2 lb. mushrooms, quartered
1/2 lb. bacon, cooked crisp and crumbled
1 deep dish pie shell (9")
8 oz. each Swiss and cheddar cheese, grated

Sauté onion and chilies until very limp. Remove from heat. Preheat oven to 350. Combine eggs, cream, Tabasco and pepper. Stir well. Add sautéed onion, chilies, mushrooms, bacon and cheese, except 1/2 cup cheese. Mix well and pour into pie shell. Top with remaining 1/2 cup cheese. Bake one hour or until knife inserted in center comes out almost clean. Serve with salad and rolls. Makes 4 large or 6 medium slices.
