Cheddar Cheese Soup

2 Tablespoons unsalted butter -- (25 mL)
1 medium onion -- diced
1/4 Teaspoon dried thyme -- (1 mL)
1/4 Teaspoon dried marjoram -- (1 mL)
1/4 cup all-purpose flour -- (50 mL)
3/4 cup Beer -- (175 mL) golden lager (try Walkerville Premium Lager)
4 cups vegetable stock -- (1 L)
1/2 Pound Cheddar Cheese -- (250 G) grated the older the better
1/2 Teaspoon Worcestershire Sauce -- (2 mL)
1/4 Teaspoon Mustard Powder -- (1 mL)
Salt and freshly ground pepper
Extra grated cheddar for garnish

1. Put butter into a heavy-bottom pot over medium heat and heat until warm.
