Ham & Cheese Baked Eggs

Ham and Cheese Baked Eggs
4 large ham slices
6 eggs
1 t. Dijon mustard
1/2 cup plain yogurt or sour cream
1 1/2 cups shredded cheddar cheese, divided
2 t. snipped fresh chives, divided
2 t. chopped fresh parsley, divided
Fresh herb sprigs for garnish, optional
Preheat oven to 375. Place 1 slice ham in 4 greased large ramekins or custard cups. In a medium bowl, beat eggs, mustard, and yogurt or sour cream. Stir 1/2 cup of the cheese, 1 t. of the chives, and 1 t. parsley into egg mixture; mix well. Spoon egg mixture evenly over ham in ramekins. sprinkle remaining cheese, chives and parsley into ramekins. Bake for 25 to 30 minutes or until cheese is golden and eggs are set. Garnish with fresh herb sprigs, if desired. Makes 4 servings.
