2 cups berries, peaches, fruit of choice
4 cups white sugar
1 Tbsp. lemon juice
1 package dry pectin (Sure Jel, for example)
3/4 cup water
Clean, hull, crush fruit ( I ran mine in the blender, not as many chunks)
Pour 2 cups of fruit into a bowl. Add 4 cups of sugar and 1 Tbsp lemon juice. Mix. Let stand 10 minutes.
Bring pkg. of pectin and 3/4 cup water in a saucepan to a boil, stirring constantly. Let it boil hard for one minute.
Immediately add pectin mixture to fruit. Stir constantly for three minutes. Pour into jars, plastic containers. Let sit out on the counter for 24 hours.
Place in freezer for up to a year. When ready to eat, pull it out of freezer and it will keep in the fridge for 3 weeks.
**I made strawberry freezer jelly today and it is delicious, so fresh tasting. I don't think I'll ever do traditional canning for jelly ever again!!!!
