Corn Fritters

Four ears sweet corn, cooked
two eggs, beaten
1/4 cup milk
1/2 cup flour
1 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoons salt
1 tablespoon bacon drippings or vegetable oil
butter and maple syrup, optional

Cut kernels from corn and place in a medium mixing bowl; Stir in eggs and milk. Mix flour, baking powder, sugar, and salt in a small bowl; stir into corn mixture, and mix gently. Heat bacon drippings or vegetable oil in a skillet over medium-high heat. Drop batter by 1/4 cupfuls and cook until delicately browned, turning to Brown the other side. Serve with butter and maple syrup, if desired. Makes one dozen.
