Cream of Brie Soup

Cream of Brie Soup

1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup (1/2 stick) butter
1/4 cup flour
1 can chicken broth, 14 oz
2 cups milk
1 round Brie cheese, rind removed, 16 oz
Crumbled cooked bacon, optional
Chopped chives for garnish

Sauté onion and celery in butter in pan until tender. Stir in flour. Cook for a few minutes, stirring constantly. Stir in broth and milk. Cook for 5 minutes or until thickened, stirring constantly. Add cheese and cook until cheese is melted, stirring frequently. Process soup in blender and return to pan. Stir in bacon. Ladle into serving bowls and sprinkle with chives. Serves 4
