Pennsylvania Dutch Hot Bacon Dressing
3 slices bacon*
1 Tbs. flour
1 egg
2 Tbs. sugar
1/4 cup high quality white, wine, or cider vinegar
1 cup water
Hot pepper flakes
*For this dressing, do not use bacon with artificial maple or hickory flavorings. Use plain or naturally smoked bacon only.
The vinegar used is also a very important choice; regular vinegar may be too sharp, so use a high quality aged vinegar (vinegar made from wines are a good choice).
Cut bacon into pieces and fry until crisp. Remove from drippings. Mix together dry ingredients. Add beaten egg, vinegar and water. Stir until blended. Cook in bacon drippings until thick. Cool and serve over greens.
