I can see why you are planning a remodel -- that is one VERY narrow galley kitchen.
I would think that moving windows and doors could be pricey - it's one thing to block up a window or a door but quite another thing to cut one in (bearing walls and all, KWIM?).
But the biggest cost would probably be relocation of plumbing (electrical isn't such a big deal though) so I think you want to keep your sink/dishwasher and gas hook-up (if any) in the same general location as they are now and work around that.
Are you thinking of an island? Maybe a peninsula instead?
