Here's the recipe for the "Grainy" pancakes I make.

 

The basic mix

 

2 1/2 cups whole-wheat flour
1 cup buttermilk powder
5 Tablespoons dried egg whites, such as Just Whites
1/4 cup sugar (I use Splenda)
1 1/2 Tablespoons baking powder

2 teaspoons baking soda

1 teaspoon salt
1 cup flaxseed meal
1 cup non-fat dry milk
1/2 cup wheat or oat bran

 

Whisk flour, buttermilk powder, dried egg whites, sugar, baking powder, baking soda and salt in a large bowl.  Stir in flaxseed meal, the oat or wheat bran and the dry milk.

 

Makes about 6 cups.
Store refrigerated in an airtight container or ziplock bag. Can be frozen up to 3 months.

 

To make pancakes:

 

1 1/2 cups skim or 1% milk
1/4 cup canola oil
1 teaspoon vanilla extract
2 cups pancake mix

Combine milk, oil and vanilla in a measuring cup.  Place pancake mix in a large bowl and whisk in the milk mixture until just blended; do not overmix.
Let stand 5 minutes. (The batter may seem thin at first, but will thicken as it stands.)
After 5 minutes, whisk the batter again.  Use about 1/4 cup for each pancake.

 

Makes about 12 pancakes.

 

Note: When I make them for just Tom and me, I halve the recipe and use a cup of the mix, 3/4 cup milk, 2 Tablespoons oil and a 1/2 a teaspoon vanilla.

Thank you for the reminder! I haven't made whole wheat pancakes for us in quite awhile. I have a simpler version, but still good. Maybe I'll make some soon..hubby would love that!
