one of my kids fav things that i make them is cheesey potatos

i slice potatoes like you would for scalped potatoes but a shade thicker.
cut up a big onion and put them all in a big fry pan.(we love to do this camping too)

i add lots of margaring and water and cook till soft. i put a lot of salt and pepper in it too, while it is cooking.

when it is just soft i add lots of cheese whiz.

the kids love it

ps we also add things like frozen peas and carrots to it while it cooks.

this recipe is always changing as we try to add new stuff to it all the time

My kids' favorite meal, especially for lunch in the summer is Homemade Chicken Noodle Soup!!


Ingredients Needed:



2 pcs cooked chicken breasts (I've also used canned chicken)
1 can cream of chicken
1 can cream of celery
1 cup chicken broth (or use the broth from cooking the chicken breasts)
1/2 bag or more if needed egg noodles
salt and pepper to taste


Cook the noodles. Drain.

I made 2 of my easy faves this weekend. They wouldn't necessarily appeal to kids, but they're delicious! One is chicken curry & the other is green chili in the crockpot. I'll try to remember to post them from home in the next few days.

Which reminds me: Does anybody know, or have a CP cookbook that tells them, how to translate from cooking on High to cooking on Low in a crockpot? A lot of crockpot recipes, like this chili, say to cook on high for 3 hours. But I can't do that on a weekaday. It's 10 hours from the time I walk out in the A.M. to the time I get home. I'd like to figure out how to use these recipes on a workday.

Usually if it calls for 8 to 10 hours on low, it will be finshed in 3 to 5 on high.

That's good to know. So these recipes that say 3 to 5 hours on high, I could do on low for the 10 hours that I'm gone on weekdays. Good! I never wanted to take a chance & experiment while I was at work!

Easy Delicious Curried Chicken


4 skinless boneless chicken breast halves


3 T butter


4 tsp curry powder


2 tsp flour


1/2 C (or more) chicken broth


1/2 C (or more) sour cream


3 T (or more) mango chutney


Melt butter in heavy skillet over med. heat. Season chicken w/salt & pepper & saute until just cooked through (They say 5 mins. per side. Experience tells me it takes longer.) Transfer chicken to a plate. Pour off most of the drippings. Add curry powder to skillet & stir for 30 seconds. Mix in flour, broth, cream, & chutney & stir til smooth. Increase heat & boil 2 mins., stirring. Return chicken to skillet. Cook 2 minutes. Season w/salt & pepper.


Good over rice or cous cous.
