Hi Suzan,


You had asked me for the chicken recipe that I make a few weeks ago, and I finally have it for you!  So, here you go :)


Apricot Chicken Divine


1/2 C of sour cream (can substitute 1/2 C of non-fat yogurt if you'd like)
2 T margarine
2T olive oil
8 skinned chicken breast halves
1/2 C flour
1 t salt
1/3-1/2 C apricot preserves
1T Dijon mustard
2T slivered almonds (optional)


Preheat oven to 375 degrees.  Melt marg. and oil in a shallow baking pan.  Meanwhile, shake chicken in a plastic bag filled with flour and salt until chicken is coated.  Place chicken in a single layer in the baking pan and bake for 25 min.


Combine apricot preserves, mustard and sour cream (or yogurt).  Spread mixture on chicken and bake for 20-30 min. more, or until the chicken is done.


Just before serving, brown the almonds in a toaster oven and sprinkle over chicken. 


I usually serve over rice...but anything you normally serve with chicken would be good.  You'll have to let me know if you try it and how you like it :)
